Vintage Cheddar Frittata

Recipe Ingredients

  1. 6 large eggs

  2. 1/4 cup Mainland Vintage Cheddar Cheese, grated

  3. 4 tablespoons italian parsley, finely chopped

  4. 1 tablespoon olive oil

  5. Salt and freshly ground pepper to taste


  1. In a large bowl, beat the eggs. Add the grated Mainland Vintage Cheddar Cheese and parsley.

  2. Season well with salt and freshly ground black pepper.

  3. Heat the oil in a 6 inch frying pan over a medium heat. Add the egg mixture, cover with a lid and cook until the eggs are just beginning to set. (Run a spatula around the edges to ensure the frittata is not sticking to the frying pan).

  4. Remove the lid, place a large plate over the frittata and flip it over.

  5. Return Frittata to the frying pan and cook the other side until it is golden brown and the eggs have set.

  6. Alternatively, cook the Frittata in a frying pan with an ovenproof handle and finish cooking in a hot oven.
