Waldorf and Mainland Cheddar Cheese Salad

Recipe Ingredients

    For the dressing
  1. grated zest of 1 lime, reserved

  2. 1 Tbsp fresh lime juice

  3. 1 egg

  4. 1 Tbsp Dijon mustard

  5. 1 cup grapeseed oil or other good quality vegetable oil

  6. salt and freshly ground black pepper

    For the salad
  1. 2 good eating apples, cut and cored

  2. 1 firm but ripe pear, cut and cored

  3. 2 sticks celery, strings removed wit ha peeler, cut into dice

  4. 1/2 cup raisins

  5. 1/4 cup very fresh walnuts

  6. 1 Tbsp torn mint leaves

  7. 1/2 cup diced Mainland Vintage Cheddar


  1. For the dressing: Place the lime juice, egg and Dijon mustard in the bowl of a small food processor and process for about 15 seconds. With the motor running, slowly pour in the oil through the feed tube and process until dressing has thickened.

  2. Transfer to a bowl and stir in the reserved lime zest. Season to taste with salt and pepper.

  3. Cover and refrigerate until ready to use.

  4. For the salad: Cut the apples and pear into about 1cm pieces and mix through a little of the dressing to prevent them browning.

  5. Add the celery, raisins, walnuts and half torn mint leaves. Toss with enough lime dressing to moisten. Cover and place in the refrigerator for 1 hour.

  6. When ready to serve, toss through the Mainland Smoked Cheese and place in a serving bowl. Sprinkle with the remaining torn mint leaves.
